Back in high school I remember making this fabulous batch of blondies from a recipe on the back of a box of Baker's white chocolate squares. Since then, I have not been able to find that same recipe. I assumed it would always be available and never bothered recording it down. I remember those blondies because the were super chewy and soft.
While sifting through my bin of baking products, I found a box of Baker's white chocolate and googled "white chocolate blondies" hoping I'd find that special recipe. There were lots of recipes that added white chocolate chips to the batter but few that actually melted it into the batter. Alas, the recipe that I settled on from Allrecipes didn't quite produce the same chewy, gooey texture I remember but it was still a decent blondie (at least until I find a replacement recipe). This produced more of a cakey blondie.
If you're wondering what a blondie is, just imagine a brownie but blond.
Ingredients:
8 ounces white chocolate
1 tablespoon vanilla extract
1/2 cup butter
1 1/4 cups all-purpose flour
2 eggs
3/4 teaspoon salt
1/3 cup white sugar
1 cup semisweet chocolate chips (I left these out)
Instructions:
1. Preheat oven to 350 degrees F.
2. Melt white chocolate and butter over a double boiler or in the microwave.
3. In another bowl beat eggs
until foamy. Gradually add the sugar and
vanilla to the eggs.
4. Add the melted white chocolate mixture to the eggs.
5. Fold the flour and salt into the white chocolate mixture.
6. Add the chocolate chips.
6. Spread the batter
evenly into a 9"x9" prepared pan. Bake for 25 minutes or until toothpick comes out clean.
