Today, I was the lucky beneficiary of some fresh peaches that my friend Julia picked at Demarest Farms. I decided to make a Southern Peach Cobbler with some of these beauties.
Here is the original recipe:
1. Preheat oven to 425 degrees.
2. In large bowl combine the following:
- 8 fresh peaches - peeled*, pitted and sliced into thin wedges
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 teaspoons cornstarch
3. Pour peaches into a baking dish and bake for 10 minutes
4. To make the topping--In a large bowl combine the following:
7. Bake until the topping is golden brown, about 30 minutes.
8. Let the cobbler cool a few minutes before digging in so that the peachy syrup tightens up a little.
TIP:
To quickly peel peaches, put whole peaches into boiling water for a few minutes. Then place into an ice water bath. The peel should just rub off easily. Less ripe peaches will require more time in the boiling water. You can use this same tip to peel tomatoes!
4. To make the topping--In a large bowl combine the following:
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
5. Blend in 6 tablespoons of cold butter until the mixture resembles coarse meal. Stir in 1/4 cup boiling water until combined.
6. Remove peaches from the oven and drop spoonfuls of the topping over it. Sprinkler the cobbler with cinnamon sugar (3 Tbsp white sugar + 1 tsp ground cinnamon).
