Emily's Cheese Puffs


While sorting through some old pictures, I was reminded of my friend Emily's cheese puffs.  One quiet afternoon she popped over with all the ingredients to make these cheese puffs with the kids.  The first time she had made them for me, I thought it was a Chinese recipe because well, she's Chinese and they had this glutinous texture like Asian rice cakes.  So I was surprised when she told me it was actually a Portuguese recipe.


She made this recipe really quickly in a blender and the kids loved adding the ingredients.  They puff up beautifully and golden brown.  I love them best straight out of the oven when the outside is still crisp and the inside is chewy and steamy. 

I think these would taste so good with crumbled bacon and scallions.  Something to try next time!

Emily's Cheese Puffs:

1 egg
1/3 cup cooking oil
2/3 cup milk
1 1/4 cup tapioca starch
1/2 cup cheese (any kind)
1 tsp salt

Combine all the ingredients in a blender and mix. 
Pour into mini muffin cups.
Bake at 425 for 20-25 minutes until golden brown and puffed up.
