Sugared Almonds

My sister recently bought 10 pounds of California Carmel Almonds.  I got half of her order.  She soaked hers overnight and dehydrated them for 12 hours.  She said it's the healthiest way to eat them and it produces a crisp almond.  She also likes to use her almonds to make protein bars.

I don't eat nearly as healthy as she does.  Instead, I decided to make some sugared almonds.

Sugared Almond Recipe:
1 c. sugar
1/2 c. water
2 c. almonds

Combine the sugar and water in a pot over medium high heat.  Once the sugar is melted add the almonds.  Continue cooking and stirring.  After ~8 minutes, the sugar will start to look like this, but don't worry just keep stirring.

Once all the moisture evaporates, you will have sugar coated almonds like the ones you find at the carnival.

Spread on a sheet of parchment and allow to cool completely before storing in an air-tight container.

Now what to do with the other 4.5 pounds of almonds...
